How to make a delicious eggless fresh fruit cake?

Fresh fruit cake is the perfect choice when you want to have a healthy dessert. It’s indeed a great thought that you can have something healthy like fresh fruits in a cake that will somehow compensate with the nutritional value of your cake.
So, here is a simple recipe that you can follow to make an eggless fresh fruit cake.
1 cup of maida(flour)
1 tbsp baking soda
1/2 cup milk
1/2 cup oil/butter/ghee
1/2 cup curd
1cup powdered sugar
A pinch of salt
Vanilla or fruit essence
1 cup cream
1/2 cup powdered sugar
1 tbsp vanilla/fruit essence
1/2 cup cream cheese
1.5 cup whipping cream
1/2 cup icing sugar
1/2 tbsp vanilla/fruit essence
Step 1: Sift maida, baking soda, salt and powdered sugar in a bowl. Then mix them well and keep it.
Step 2: Take another bowl and add milk, oil, curd and vanilla essence into it. Keep on stirring continuously while adding all these ingredients.
Step 3: Slowly add all the dry ingredients into this bowl and blend them properly and make a smooth batter.
Step 4: Empty the batter in a greased tin cake and put it in an oven of 180 Celsius for 40-45 mins.
Step 5: Insert a toothpick and check whether it is baked properly or not. If it is not baked well, then keep it in the oven for more 5-10 mins. Later cool it down for some time.
Now let’s start making the whipped cream.
Step 6: Take a bowl and add cream, icing sugar and vanilla essence. Stir it thoroughly until it forms a peak.
Step 7: Now add some whipped cream on the cake and spread it evenly on the cake.
Step 8: Add fresh fruits of your choice on the top of the cake. Also, spread some dry fruits.
Step 9: Add one more layer of cake on it and repeat the whole process. If you want to make it bigger then add as many layers you want. Chill it down for 30 mins.
Let’s proceed with the frost.
Step 10: Take cheese and keep on adding whipping cream, icing sugar and vanilla essence and continuously stir it to form a peak.
Step 11: Once the frost is ready, apply it on the entire cake. Use a scraper to clean the extra cream and chill the cake for 30 mins.
Step 12: Put all the fruits on the cake and apply a jam glaze on the fruits to give a shiny effect.
